" __Julia Child "Cooking is a creation." __Piero Selvaggio "'Tis an ill cook that cannot lick his own fingers." __William Shakespeare ______________________________________Cauliflower in Cheddar Sauce Ingredients: 1 large head of fresh cauliflower 1/4 cup butter 1/4 cup flour 1 cup milk 1/3 cup mild cheddar cheese salt and pepper to taste garlic powder to taste Instructions: 1) Remove outer leaves from cauliflower and place head in a colander over a pot of simmerin' water. 2) Cover pot and steam for about twenty-five minutes 'til the cauliflower is tender, but not mushy. 3) Melt 1/4 cup butter in a saucepan. 4) Add 1/4 cup flour, stirrin' to a smooth paste. 5) Cook over medium heat, stirrin' constantly, for several minutes. 6) Slowly add 1 cup of milk, stirrin' constantly. 7) Add cheese, salt, pepper, and garlic powder, stirrin' constantly 'til sauce begins to thicken. 8) When cauliflower is done steamin', place the head in a servin' bowl, pour on the sauce, and serve.
