cabb-apple chowder

" __Julia Child "Cooking is a creation." __Piero Selvaggio "'Tis an ill cook that cannot lick his own fingers." __William Shakespeare ______________________________________Cabb-apple Chowder Ingredients: 8 large Granny Smith apples, diced 4 large Idaho potatoes, diced 1 large onion, minced 3 and 1/2 quarts chicken stock 2 cups apple cider 6 ounces smoked bacon, diced 1 large green cabbage, chopped 2 cups heavy cream salt and pepper to taste Instructions: 1) Combine chicken stock and apple cider in a kettle. 2) Add apples, potatoes, and onions, the cook 'til potatoes are tender. Set aside to cool. 3) Cook bacon in a saucepan 'til browned. 4) Add cabbage to bacon and cook 'til cabbage is tender, then set aside. 5) Once the apple mixture is cool, beat it smooth. If you're not usin' a blender, that's really gonna take some doin'. 6) Add cabbage and bacon to the apple mixture and heat through. 7) Add heavy cream, salt and pepper to taste. 8) Serve when heated through.
