" __Julia Child "Cooking is a creation." __Piero Selvaggio "'Tis an ill cook that cannot lick his own fingers." __William Shakespeare ______________________________________Truck Patch Stir Fry Ingredients: 3 cups water 1 teaspoon salt 1 and 1/2 cups long-grain white rice 1 bunch green onions 1/2 cup soy sauce 2 tablespoons peanut butter 1 tablespoon white vinegar 1 teaspoon white sugar 1 teaspoon crushed red pepper 2 tablespoons vegetable oil 2 cups fresh green beans, diagonally sliced 1 small yellow squash, sliced 1/2" thick 1 small zucchini, sliced 1/2" thick 1 green bell pepper, sliced Instructions: 1) Bring water to a boil in a large kettle, then add salt. 2)Stir in the rice, cover and cook over low heat for about eighteen minutes, or 'til the water is absorbed and the rice is tender. 2) Meanwhile, trim the green onions. Discard the roots and any wilted tops, then dice. 3) In a small bowl, combine onions, soy sauce, peanut butter, vinegar, sugar, and red peppers. Keep stirrin' til the liquid is well blended with the peanut butter, then set aside. 4) Heat the vegetable oil in a large skillet. 5) When the oil is good and hot, add the green beans and stir fry 'em for about three minutes. 5) Then add the yellow squash, zucchini, and green peppers. Stir fry for another two minutes. 6) Add the peanut butter sauce mixture and cook, stirrin' constantly, 'til the vegetables are well coated and heated through. 7) Serve over rice.
