It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Granny's Sunshine Cake Ingredients: 9 egg whites 1 teaspoon cream of tartar 1 and 1/2 cups white sugar 1/2 cup water 9 egg yolks 1/4 cup cookin' oil 2 teaspoons vanilla extract 1 and 1/4 cups cake flour 1 small package of lemon flavored instant puddin' Instructions: 1) Preheat oven to 325�. 2) Beat together egg whites and cream of tartar 'til soft peaks form. 3) Combine white sugar and water in a saucepan and cook 'til the mixture spins a thread from a fork. 4) Slowly pour the hot sugar into the egg whites and beat 'til the whites turn glossy and form peaks. 5) Beat together the egg yolks, oil, and vanilla extract. 6) Add egg yolk mixture to the egg white mixture. 7) Sift together the flour and puddin'. 8) Fold the flour mixture into the egg mixture. 9) Pour batter into an ungreased tube pan. 10) Bake for sixty minutes. 11) Turn pan upside down on a bottle to cool, and remove from pan.
