It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Seashore Salad Ingredients: 1 box [16 ounce size] small pasta shells 3 large navel oranges 1 cup fresh mint leaves, tightly packed 4 cloves garlic, chopped 2/3 cup vegetable oil 1/3 cup apple cider vinegar 2 tablespoons Dijon mustard 1 teaspoon salt 1 can [15 and 1/2 ounce sized] black beans, rinsed and drained 2 large red bell peppers, cut into strips 1 large red onion, sliced thin 1 cup dry roasted peanuts, coarsely chopped Instructions: 1) Cook pasta accordin' to package directions. 2) Meanwhile, grate 2 teaspoons zest from the oranges and set it aside. 3) Peel the oranges, remove pith, and separate into sections. 4) Combine the mint, garlic, vegetable oil, cider vinegar, Dijon mustard, orange zest, and salt --- beat or blend 'til almost smooth. 5) Rinse cooked pasta under cold water, then drain completely. 6) Put the past in a salad bowl, then add the beans, orange sections, peppers, and onion. Mix well. 7) Pour the dressin' over the salad and toss 'til coated. 8) Cover with saran wrap and chill for at least an hour. 9) Sprinkle peanuts over salad prior to servin'.
