It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Celery Casserole Ingredients: 5 cups celery, chopped 1/2 cup margarine 2 tablespoons onion, chopped 1/4 cup all-purpose flour 2 cups whole milk 1 teaspoon salt 1/8 teaspoon black pepper 1/2 cup heavy cream 3/4 cup pecans, chopped 1/3 cup seasoned bread crumbs Instructions: 1) Preheat oven to 375�. 2) Butter a 1 and 1/2 quart casserole dish. 3) Melt 1/4 cup of the margarine in a double boiler. 4) Add the onion and the flour and cool 'til thickened to the consistency of gravy. 5) Remove from heat and stir in the milk, salt, and pepper. 6) Cook for an additional fifteen minutes, 'til mixture is thickened. 7) Cook celery in salted water in a covered pan for about fifteen minutes. 8) Drain the celery completely and put it the bottom of the prepared casserole dish. 9) Stir the heavy cream into the thickened sauce mixture and pour over the celery. 10) Melt the other 1/4 cup of margarine, then add the crumbs and the chopped pecans. 11) Sprinkle crumb mixture on top of casserole and bake, uncovered, for fifteen minutes.
