picnic potato salad

It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Picnic Potato Salad Ingredients: 1 pound unpeeled potatoes, cut into 1 inch cubes 2 tablespoons olive oil 1/4 teaspoon salt 1/4 teaspoon pepper 2 medium summer squash, cut into 1 and 1/2 inch chunks 1/3 cup vinegar and oil salad dressin' 1 small red sweet pepper, diced 6 cherry tomatoes, cut in half 1 teaspoon snipped fresh thyme 1/4 cup snipped fresh parsley Instructions: 1) In a large skillet, cook the potatoes in hot olive oil over medium heat, turnin' intermittently, 'til they're tender and browned on all sides. 2) Spoon the potatoes into a servin' bowl, then sprinkle with the salt and pepper. 2) Put the summer squash in the same skillet, cookin' and stirrin' over medium heat 'til just tender. 3) Put the cooked squash in the servin' bowl with the potatoes. 4) Pour the salad dressin' over the potatoes and squash. 5) Add the sweet pepper, tomatoes, parsley, and thyme. Toss gently to mix. 6) Cool, then cover and chill for 4 hours or overnight, stirrin' salad occasionally.
