It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Dr. Pepper Cake Ingredients: 1 and 1/4 cups boilin' Dr. Pepper 1 cup quick cookin' oats 1/2 cup Crisco 1/2 cup white sugar 1/2 cup brown sugar 2 eggs 1 and 1/3 cups all-purpose flour 1/2 teaspoon salt 1 teaspoon bakin' soda 1 teaspoon nutmeg Instructions: 1) Preheat oven to 375�. 2) Grease and flour a 9 by 9 inch bakin' pan. 3) Pour the boilin' Dr Pepper over the oats, stir, then let stand for ten to twenty minutes. 4) Cream together the shortenin' and the sugar 'til light and fluffy. 5) Add the eggs, beatin' 'til the mixture is fluffy. 6) Sift together the flour, salt, bakin' soda, and nutmeg. 7) Add flour mixture to creamed mixture, mixin' well. 8) Add the oatmeal mixture and combine thoroughly. 9) Pour the batter into the prepared pan. 10) Bake for forty to forty-five minutes, 'til the cake tests done. 11) Spread ***Coconut Toppin' over the hot cake and then put the cake under the broiler. 12) Broil 'til bubbly and lightly brown. Serve warm. ***Coconut Toppin' Ingredients: 1/3 cup butter, melted 1/2 cup brown sugar 1/4 cup light creme 1 cup coconut, finely grated Instructions: 1) Mix the melted butter with the brown sugar and creme. 2) Stir in the coconut.
