This is what my granny used to call a 'punctuation dessert'.
It really puts an exclamation point at the end of a meal.

Hummingbird Cake

Cake Ingredients:
3 cups all-purpose flour
2 cups white sugar
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
3 large eggs
3/4 cup vegetable oil
1 and 1/2 tsp. vanilla extract
1 cup crushed pineapple, with juice
1 3/4 cup ripe mashed bananas
1 and 1/2 cups pecan bits

Icing ingredients:
8 oz. package of cream cheese
1 stick butter, softened
16 oz. box powdered sugar, sifted
1 tsp. vanilla
1 cup pecan bits

Preheat oven to 350�.
1) Mix together dry ingredients, then set aside.
2) Beat together eggs and oil usin' a wooden spoon, not a mixer.
3) Add vanilla, crushed pineapple with juice and mashed bananas
4) Stir in pecans.
5) Stir together the dry ingredients and the pineapple mixture
'til thoroughly combined.
6)Spoon batter evenly into 3, greased and floured 9" cake pans.
7)Bake at 350� for 28 to 30 minutes, or 'til a toothpick inserted
in the center comes out clean.
8) Let cake cool completely before spreadin' icin' between and
on top of the cooled layers.

To make icin':
1) Cream together the cream cheese and butter.
2)Slowly add powdered sugar, beatin' 'til the mixture is light and fluffy.
3) Stir in the vanilla.
4)Stir in pecans --- or set 'em aside and sprinkle 'em over the top
of the frosted cake.
