There are many recipes for fixin' Fried Corn.
Here come two of 'em.

Fried Corn Variation #1

Ingredients:
4 ears fresh corn
2 tablespoons butter
1 small sweet onion, diced
salt and pepper to taste

Instructions:
1) Cut corn kernels off the cobs.
2) Melt butter in a medium skillet over medium heat.
3) Saut� the corn kernels just 'til tender, then stir in the onion.
4) Continue to saut� 'til onion is just beginnin' to turn crispy.
5) Add salt and pepper accordin' to taste.

Fried Corn Variation #2

Ingredients:
6 ears fresh corn
butter
3 eggs
salt and pepper to taste

Instructions:
1) Cut the corn kernels off the cobs.
2) Heat a lump of butter in a skillet.
[The 'lump' should be about the size of a small egg.]
3) Add the corn and saut�'til just softened.
4) Add salt and pepper.
5) Break eggs over corn and scramble.
