" __Julia Child "Cooking is a creation." __Piero Selvaggio "'Tis an ill cook that cannot lick his own fingers." __William Shakespeare ______________________________________Catfish Stew Ingredients: 2 medium-sized potatoes 14 and 1/2 ounces canned tomatoes, cut up --- home canned-tomatoes are best, but store bought will suffice 1 cup onion, chopped 2 cups water 2 cloves garlic, minced 1/2 head cabbage, coarsely chopped 1 lb catfish fillets sliced green onions for garnishin' 4 cups hot cooked rice [brown or white] Instructions: 1) Peel potatoes and cut into chunks. 2) In a large kettle combine potatoes, undrained tomatoes, water, and garlic. 3) Bring to a boil, then reduce to medium heat. Cover and cook for 10 minutes. 4) Add cabbage. Return to a boil then reduce heat to medium. Cover and cook for five minutes, stirrin' occasionally. 5) Meantime, cut the catfish fillets into 2" lengths. Coat with *Spicey Seasonin'. 6) Add fish to vegetables. Reduce heat and simmer, covered, for five minutes or 'til fish flakes easily with a fork. 7) Serve over hot rice and garnish with green onions. *Spicy Seasonin' Ingredients for Spicy Seasonin': 2 tablespoons dried oregano, crushed 2 teaspoons chili powder 1 teaspoon garlic powder 1 teaspoon black pepper 1 teaspoon cayenne pepper 1/2 teaspoon dry mustard Instructions for Spicy Seasonin': 1) Thoroughly combine all ingredients.
