" __Julia Child "Cooking is a creation." __Piero Selvaggio "'Tis an ill cook that cannot lick his own fingers." __William Shakespeare ______________________________________Spaghetti Squash Pancakes Ingredients: 6 cups spaghetti cooked squash 1/3 cup all-purpose flour 1/2 cup grated Parmesan cheese 4 tablespoons butter salt and pepper to taste sour cream and apple sauce for sides Instructions for cookin' squash: 1) Preheat oven to 375�. 2) Pierce the whole shell several times with a large fork and place in a bakin' dish. 3) Cook for about 1 hour or 'til flesh is tender. 4) Once the squash is cooked, let it cool for ten to twenty minutes, then cut it in half and remove the seeds. 5) Pull a fork lengthwise through the flesh to separate it into long strands. Instructions for pancakes: 1) Add the flour and the cheese to the strands of the cooked spaghetti squash. Mix thoroughly. 2) Melt 1 tablespoon butter in a large skillet over medium-high heat and place 1/4 cup squash mixture in the prepared skillet. 3) With a fork, press to form an evenly thick cake. 4) Repeat to fill skillet. 5) Cook cakes 'til the bottoms are lightly browned, turnin' to brown the opposite sides. 6) Continue until you've used all the squash mixture ***Keep finished cakes warm in oven set to lowest temperature. Use additional butter as needed for cookin' cakes. 7) Salt and pepper cakes to taste and serve with a choice of sour cream or apple sauce.
