" __Julia Child "Cooking is a creation." __Piero Selvaggio "'Tis an ill cook that cannot lick his own fingers." __William Shakespeare ______________________________________Cheese Chili Ingredients: 2 large onions, diced 2 tablespoons butter 1/4 cup tomato paste 1 tablespoon chili powder 1 tablespoon cocoa powder 1 teaspoon cumin seed 3 medium sized carrots, chopped 3 ribs celery, sliced 3 small jalape�o peppers, seeded and minced 28 ounces canned crushed tomatoes 2 cups cooked or canned black beans, rinsed 12 ounces tomato juice [or dark beer, if desired] 4 ounces shredded Mozzarella cheese 4 ounces shredded Monterey Jack cheese 4 ounces shredded sharp Cheddar cheese Instructions: 1)Saut� onions in butter over medium high heat in large saucepan 'til they're translucent. 2) Add tomato paste, chili powder, cocoa powder, and cumin, and cook 'til mixture caramelizes to a dark brown. 3) Stir in carrots, celery and jalape�os and stir to coat. 4) Add crushed tomatoes and beans. 5) Stir in tomato juice. 6) Simmer for two hours. 7) Preheat broiler. 8) Stir Mozzarella and Monterey Jack cheese into chili and top with shredded Cheddar. 9) Broil 'til cheese bubbles, then serve.
