mushroom and cheese potatoes

" __Julia Child "Cooking is a creation." __Piero Selvaggio "'Tis an ill cook that cannot lick his own fingers." __William Shakespeare ______________________________________Mushroom and Cheese Potatoes Ingredients: 7 medium-sized Russet bakin' potatoes, peeled and cut into 1 and 1/2' chunks 4 tablespoons butter 2 and 1/2 cups chopped mushrooms 1/2 cup chopped green onions 1/2 cup (about 2 ounces) soft, spreadable cheese with garlic and herbs 1/2 cup (about 2 ounces) shredded provolone 1 cup (about 4 ounces) grated fresh Parmesan or Asiago cheese 1/2 cup warm milk Additional shredded cheese for sprinklin' on top, optional Instructions: 1) Cook potatoes in large pot of boilin' water 'til very tender. 2) Drain potatoes in colander. 3) Return potatoes to pot and mash with potato masher. 4) While potatoes are cookin', heat butter in 10' skillet 'til melted. 5) Add mushrooms and onions and cook 'til tender. 6) Stir cheeses into hot potatoes 'til smooth. 7) Add milk to make a creamy consistency. 8) Stir in mushroom mixture. 9) Ladle into a servin' bowl, sprinkle with additional cheese, and serve immediately.
