quick cheddar grits and greens

" __Julia Child "Cooking is a creation." __Piero Selvaggio "'Tis an ill cook that cannot lick his own fingers." __William Shakespeare ______________________________________Quick Cheddar Grits 'N Greens Ingredients: 1 [ten ounce] package frozen turnip greens any type of frozen greens will do 2/3 cup quick cookin' grits 1/4 teaspoon salt 1 and 1/4 cups grated cheddar cheese 1 tablespoon butter 2 clove garlic, minced 1/2 teaspoon Tabasco sauce Instructions: 1) Preheat broiler. Thaw and drain greens; press to remove moisture. 2) In a medium saucepan, bring 2 and 1/4 cups water to a full boil over high heat. 3) Gradually whisk the grits into the water, then stir in the salt. 4) Reduce heat, cover and cook, stirrin' occasionally 'til the grits are well thickened. 5) Stir in 1 cup cheddar cheese. 6) While the grits are cookin', melt butter in a skillet over medium heat. 7) Add garlic and cook, stirrin' constantly for one minute. 8) Add greens and heat through. 9) Add Tabasco. 10) Spread greens in the bottom of a buttered one quart casserole dish. 11) Spoon grits over greens, then sprinkle with the remainin' 1/4 cup cheddar cheese. 12) Broil five inches from heat for two minutes, 'til the cheese melts and the grits start to brown around the edges.
