" __Julia Child "Cooking is a creation." __Piero Selvaggio "'Tis an ill cook that cannot lick his own fingers." __William Shakespeare ______________________________________Deluxe Mushroom Casserole Ingredients: 1 onion, chopped 2 cloves garlic 1 pound mushrooms, chopped 3 tablespoons parsley, chopped 4 tablespoons butter 4 tablespoons oil 1 cup bread crumbs 2/3 cup vegetable broth 1/2 teaspoon, marjoram salt and cayenne pepper to taste 1/2 teaspoon rosemary a dash of kelp and a dash of brewer's yeast [optional] 2 large eggs 4 cups cooked rice or barley 1/2 cup sharp cheddar cheese, grated Instructions: 1) Preheat oven to 300�. 2) In a large skillet, saut� onion, garlic, mushrooms, and parsley in butter and oil, 'til onions are almost golden brown. 3) Add bread crumbs, broth, and seasonin's, and cook for an additional minute. 4) Beat eggs in a bowl, then add cooked rice, or cooked barley, or a combination of cooked rice and cooked barley. Just so you have a total of 4 cups of cooked grains. You can even use wheat berries if you take a mind to. 5) Add the contents of the skillet to the grain and egg mixture, and combine thoroughly. 6) Turn into an oiled casserole dish and top with cheddar cheese. 7) Bake for 30 minutes.
