Easy Angel Cake

Ingredients:
6 egg whites, at room temperature
1/2 teaspoon cream of tartar
1/8 teaspoon salt
1/4 cup plus 2 tablespoons white sugar
1/2 cup sifted plain flour
1/2 teaspoon vanilla extract
1/8 teaspoon almond extract
1/2 cup flaked coconut

Instructions:
1) Preheat oven to 350�.
2) Beat egg whites 'til foamy.
2) Add cream of tartar and salt, then beat 'til soft peaks form.
3) Add the sugar, approximately 2 tablespoons at a time,
beatin' til stiff peaks form.
4) Sprinkle flour over egg white mixture and gently fold it in.
5) Gently fold in the vanilla and almond extracts.
6) Pour the batter into an ungreased 9" square bakin' pan.
7) Sprinkle coconut over the top and bake for thirty minutes,
or 'til a toothpick inserted in the center comes out clean.
8) Cool in pan approximately forty minutes.
