" __Julia Child "Cooking is a creation." __Piero Selvaggio "'Tis an ill cook that cannot lick his own fingers." __William Shakespeare ______________________________________Three Cheese Casserole Ingredients: 7 large eggs 1 cup whole milk 2 teaspoons sugar 4 cups ( 1 pound) shredded Monterey Jack [or your choice of cheeses] 4 ounces cream cheese, cut in cubes 1 [16-ounce size] container small curd cottage cheese 2/3 cup butter, melted 1/2 cup all-purpose flour 1 teaspoon bakin' powder Instructions: 1) Preheat oven to 350� and grease a 3-quart casserole dish. 2) Beat together eggs, milk and sugar. 3) Add the cheeses and melted butter, blendin' thoroughly. 4) Stir in flour and bakin' powder and pour into the casserole dish. 5) Bake for forty-five to fifty minutes, or 'til a knife inserted in the center comes out clean. 6) Cut into squares and serve hot. This goes very well with tossed salad and hot cornbread.
