" __Julia Child "Cooking is a creation." __Piero Selvaggio "'Tis an ill cook that cannot lick his own fingers." __William Shakespeare ______________________________________Apricot Carrot Bread Ingredients: 1 and 3/4 cups all-purpose flour 1 teaspoon bakin' powder 1/4 teaspoon bakin' soda 1/4 teaspoon salt 1 egg, beaten 1/2 cup granulated sugar 1/2 cup applesauce 1/2 cup carrots, shredded 2 tablespoons vegetable oil 1/3 cup dried apricots, cut into tiny bits 1/2 cup confectioners' sugar 2 teaspoons apple juice Instructions: 1) Preheat oven to 350� and lightly grease an 8x4" loaf pan. 2) Combine flour, bakin' powder, bakin' soda, and salt in a large bowl. 3) In a medium size bowl, combine beaten egg, sugar, applesauce, carrots, and vegetable oil. 4) Add moist ingredients all at once to the dry ingredients 5) Stir 'til just moistened. The batter will be rather thick. 6) Fold in the apricots. 7) Pour batter into loaf pan and bake for forty-five to fifty minutes, or 'til a toothpick inserted in the center comes out clean. 8) Remove from oven and let cool. 9) Drizzle icin' over the top before servin', if desired. Icin': Combine 1/2 cup sifted confectioners' sugar with enough apple juice or plain water to form a drizzlin' consistency.
