These biscuits get their name in virtue of their size which is,
ideally, big as a cat's head.

Cat's Head Biscuits

Ingredients:
2 cups of flour
1/4 teaspoon of bakin' soda
2 teaspoons of bakin' powder
1 teaspoon of salt
5 tablespoons lard or shortenin'
1 cup buttermilk --- approximately

Instructions:
1) Preheat oven to 450�.
2) Sift the dry ingredients together in a large bowl.
3) Cut in the lard or shortenin' with two knives.
4) Add enough buttermilk to make a soft dough.
5) Pinch off dough in balls about the size of a lemon for each biscuit, then pat 'em out with your hands.
5) Bake for twelve to fifteen minutes, or 'til the tops are golden brown.
6) Remove from oven and, if desired, rub a little butter over the top
of each biscuit.

Cat's Head Biscuits are real good smothered in gravy --- spread with homemade jam, butter and brown sugar, or cinnamon and brown sugar --- or served with fresh berries and ice cream in lieu of shortcake.
