" __Julia Child "Cooking is a creation." __Piero Selvaggio "'Tis an ill cook that cannot lick his own fingers." __William Shakespeare ______________________________________Julia's Fried Catfish Ingredients: 1/2 cup yellow or white cornmeal 1/2 cup flour 1 and 1/2 teaspoons salt 1 and 1/2 teaspoons black pepper 1 teaspoon garlic powder 1/2 teaspoon cayenne pepper a pinch of dry mustard a pinch of paprika a pinch of powdered cloves 4 to 6 [4 to 8 ounce size] catfish filets peanut oil Instructions: 1) In a large bowl, thoroughly mix cornmeal, flour, salt, pepper, garlic powder, cayenne, mustard, paprika, and cloves. You can do pretty much what you want to with the spices. Let your tastebuds be your guide. 2) Dredge filets in the flour mixture to coat completely. 3) Pour 2 to 3 inches peanut oil in large skillet and heat to approximately 375�. 4) Drop catfish filets, two at a time, into the hot oil. 5) Fry catfish 'til golden brown, four to eight minutes, dependin' on thickness.
