It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Spud Fudge 3 squares [3 ounce size] unsweetened chocolate 3 tablespoons butter 1/2 cup plain mashed potatoes [at room temperature] 1 teaspoon vanilla extract 1/4 teaspoon salt 1 pound powdered sugar, sifted 2 teaspoons milk almonds, chopped Instructions: 1) In a saucepan, melt the chocolate and butter over low heat, stirrin' occasionally. 2) Remove from heat and blend in the mashed potatoes, vanilla extract, and salt. 3) In a large bowl, add chocolate mixture to the sifted powdered sugar and thoroughly combine. 4) If the dough is too dry and crumbly, add enough milk to make it 'knead-able'. 5) Turn dough onto a board that's been dusted with powdered sugar and knead 'til smooth. 6) Shape dough into two rolls, both approximately 1" in diameter. 7) Roll in chopped almonds, wrap in waxed paper, and chill throughly. 8) Cut into 1/2" slices. Store in refrigerator.
