I have two or three different recipes for most things I cook, but when it comes to corn bread, corn pone, and biscuits, I have about twenty each. This is how my granny fixed corn pone in a skillet.

Skillet Corn Pone

Ingredients:
1 egg
2 tablespoons sugar
1 tablespoon bakin' powder
1 teaspoon bakin' soda
1 teaspoon salt
2 cups corn meal
1 and 3/4 cup buttermilk
1 tablespoon cookin' oil

Instructions;
1) Beat together egg, sugar, bakin' powder, bakin' soda, and salt.
2) Add the corn meal and buttermilk. Combine thoroughly.
3) Heat oil in a large, heavy skillet and fry batter by 1/4 cups full.
Add more oil as needed.
4) Brown on both sides, then serve with butter, honey, jam,
or whatever you have a taste for.
