" __Julia Child "Cooking is a creation." __Piero Selvaggio "'Tis an ill cook that cannot lick his own fingers." __William Shakespeare ______________________________________Catfish 'N Corn Ingredients: 1 tablespoon butter 1/4 cup water 4 ears corn, cut kernels from the cob 1/4 cup red pepper, minced 1/4 cup green onion, minced 2 tablespoons half-and-half salt and pepper to taste 4 [6 ounce size] catfish fillets 1/4 cup buttermilk 1/2 teaspoon hot sauce 1/2 cup cornmeal 2 tablespoons butter 1 tablespoon olive oil salt and pepper to taste Instructions for corn: 1) Melt butter in a large skillet. 2) Add the corn and the water. 3) Cover and simmer for four minutes. 4) Stir in red pepper and cook for another minute. 5) Add green onion, half-and-half. 6) Add salt and pepper to taste. Instructions for catfish: 1) Combine buttermilk and hot sauce. 2) Brush buttermilk mixture brush on catfish and marinate for ten to fifteen minutes. 3) Lightly coat catfish with cornmeal, then season with salt and pepper to taste. 4) Melt butter and olive oil in a Teflon skillet over medium high heat. 5) Once the skillet is hot, saut� catfish three to four minutes per side, 'til golden brown and crisp. 6) Serve with corn.
