Black Bean Salad

Ingredients:
3 and1/2 cups cooked, drained black beans
1/4 green onion, diced
1/4 cup red onion, diced
1 large tomato, seeded and diced
1 small green bell pepper, seeded and diced
1 large cucumber, seeded and diced
1/2 cup chopped parsley
1 tablespoon dry mint
1/4 cup lemon juice
1 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup olive oil

Instructions:
1) Combine beans, green and red onions, tomato, pepper, cucumber, parsley, and mint in a large bowl.
2) In a separate bowl, combine lemon juice with cumin, salt,
and pepper.
3) Beat in olive oil.
4) Fold dressin' into bean salad mixture.
5) Chill for three to four hours before servin'.
