Win's Cabbage Salad

Ingredients:
1/2 cup butter
1/2 cup shallots, chopped
1 medium-slized head red cabbage, thinly sliced
2 cups onions thinly sliced
2 large Granny Smith apples, peeled and thinly sliced
3/4 cup raspberry vinegar
1/2 cup white sugar
1 pint fresh raspberries [you can substitute 2 cups frozen rasberries]
salt and pepper to taste

Instructions:
1) Melt butter in heavy large kettle over medium heat.
2) Saut� shallots 'til tender.
3) Add cabbage, onions, apples, vinegar and sugar to pot.
4) Cook 'til cabbage is limp, stirrin' often,
for approximately fifteen minutes.
5) Add raspberries.
6) Cook, stirrin' frequently for about twenty five minutes.
Most of the liquid should evaporate.
7) Season to taste with salt and pepper. Serve hot.
