" __Julia Child "Cooking is a creation." __Piero Selvaggio "'Tis an ill cook that cannot lick his own fingers." __William Shakespeare ______________________________________Cloud 9 Oatmeal Cookies Ingredients: 2 cups all-purpose flour 1 teaspoon bakin' powder 1/2 teaspoon bakin' soda 1/4 teaspoon salt 1 cup flaked coconut 1 1/2 cups plain, quick cookin' oatmeal 1 cup chopped pecans 2 cups chopped dates 1 tablespoon grated lemon rind 1 teaspoon grated orange rind 1 cup butter 1 cup white sugar 1 cup brown sugar, packed 2 large eggs 1 teaspoon vanilla extract Instructions: 1) Preheat oven to 375�. 2) Combine flour, bakin' powder, bakin' soda, and salt in a mixin' bowl. 2) Stir in coconut, oats, pecans, dates, lemon and orange rind, then set aside. 3) In a separate bowl, cream butter and sugar 'til light and fluffy. 4) Beat in eggs and vanilla. 5) Stir in flour mixture 'til just blended. 6) Drop dough by tablespoons full, 2" apart onto ungreased cookie sheets. 7) Bake for ten to twelve minutes. Cool on wire racks.
