Amazin' Maple Cookies

Ingredients:
3 cups all-purpose flour
4 teaspoons bakin' powder
1 teaspoon salt
1 cup vegetable shortenin'
2 cups brown sugar, packed
2 large eggs
1 cup pure maple syrup
1 teaspoon vanilla extract
2 cups flaked coconut

Instructions:
1) Preheat oven to 375. Lightly grease cookie sheets.
2) Combine flour, bakin' powder, and salt in a mixin' bowl,
then set aside.
3) In a separate bowl, cream shortenin' and brown sugar until fluffy.
4) Beat in the egg, syrup, and vanilla 'til thoroughly blended.
5) Stir in flour mixture until just mixed.
6) Stir in coconut.
7) Drop by tablespoons full, 2" apart on greased cookie sheets.
8) Bake for ten to twelve minutes, or 'til golden brown.
9) Cool on racks. Store in a sealed container.
