" __Julia Child "Cooking is a creation." __Piero Selvaggio "'Tis an ill cook that cannot lick his own fingers." __William Shakespeare ______________________________________Rachel's 2x Cheese and Tater Casserole Ingredients: 8 to 12 medium sized potatoes, (about 3 lbs) 8 ounces cream cheese, softened 8 ounces sour cream 1/2 cup butter 1/4 teaspoon garlic powder salt and pepper to taste 1 and 1/4 cups shredded cheddar cheese. Instructions: Preheat oven to 350�. Peel and quarter potatoes. 1) In a large saucepan, cook potatoes in enough water to cover for twenty to twenty-five minutes or 'til tender. Drain off liquid. 2) In a large mixin' bowl, combine the potatoes, cream cheese, sour cream, butter, garlic powder, salt, and pepper. 3) Beat the mixture 'til fluffy. [Probably much easier to do if you're usin' an electric mixer.] 4) Turn mixture into a buttered 2 quart casserole dish. 5) Top with cheddar cheese. 6) Cover for forty-five minutes. 7) Uncover and bake for 15 minutes more.
