" __Julia Child "Cooking is a creation." __Piero Selvaggio "'Tis an ill cook that cannot lick his own fingers." __William Shakespeare ______________________________________Chocchini Pecan Bread Ingredients: 1 cup salad oil 3 eggs 1 teaspoon salt 1/4 teaspoon bakin' powder 1/2 teaspoon bakin' soda 2 ounces bakin' chocolate, melted 2 cups zucchini, peeled and grated 1 cup chopped pecans 2 cups white sugar 3 cups all-purpose flour 1 teaspoon cinnamon 1 teaspoon vanilla extract 1/2 cup chocolate chips Instructions: 1) Preheat oven to 350�. Grease two 9x5" loaf pans. 2) Combine oil and eggs. 3) Add melted chocolate. 4) Stir in zucchini and vanilla extract. 5) Sift together the flour, salt, cinnamon, bakin' powder, and bakin' soda. 6) Stir the sugar into zucchini mixture. 7) Thoroughly combine the sugar-zucchini mixture with the sifted dry ingredients. 8) Add pecans and chocolate chips, blendin' thoroughly. 9) Divide batter between two well-greased pans and bake for one hour.
