Special Cheese 'N Broccoli Pie

Ingredients for potato crust:
2 cups grated raw potatoes, firmly packed
1/2 teaspoon salt
1 egg, beaten
1/4 cup onion, grated
vegetable oil

Ingredients for pie fillin':
3 tablespoons butter
1 cup onion, chopped
1 medium clove garlic, minced
1/2 teaspoon salt
3/4 teaspoon pepper
1/4 teaspoon dried thyme, crushed
3/4 tsp dried basil, crushed
1 and 1 /2 cups broccoli florets
1 and 1/2 cups cheddar cheese, shredded and divided
2 eggs
1/4 cup whole milk
paprika to taste

Instructions for potato crust:
1)Preheat oven to 400�. Oil a 9" pie pan.
2) Place raw potatoes in a colander, salt, and set aside for ten minutes.
3) Squeeze out any excess water.
4) Combine potatoes egg, and onion in a mixin' bowl.
5) Lightly flour your hands, then pat the potato mixture ino the prepared pie pan. Make sure you bring it up the sides of the pan.
6) Bake crust for thirty five to forty minutes, or 'til golden brown.
After it's been in the oven for twenty minutes, brush it with vegeteble oil,
then finish bakin'.
7) Remove crust from oven when it's done,
then reduce the oven temperature to 375�.

Instructions for fillin:
1) While the potato crust is bakin',
melt butter over medium-high heat in a large skillet.
2) Saut� onion and garlic 'til onion is soft.
3) Add salt, pepper, thyme, basil, and broccoli.
4) Cover and cook for ten minutes, stirrin' occasionally.
5) Place half of the cheddar cheese into the baked potato crust.
6) Pour the broccoli mixture on top of cheese.
7) Sprinkle the remainder of the cheddar cheese evenly over
the broccoli mixture.
8) In a small bowl, combine eggs and milk; stirrin' 'til thoroughly blended.
9) Pour egg mixture onto top of the pie fillin', then sprinkle with paprika.
10) Bake for thirty to thirty-ive minutes or 'til a knife inserted halfway between center and edge comes out clean.
11) Remove from oven and serve immediately.
