libby's ham hock 'n bean soup

" __Julia Child "Cooking is a creation." __Piero Selvaggio "'Tis an ill cook that cannot lick his own fingers." __William Shakespeare ______________________________________Libby's Ham Hock 'N Bean Soup Ingredients: 3/4 cup dried lima beans 1 smoked ham hock 4 cups chicken broth 2 cups fresh tomatoes, chopped 2 large carrots, chopped 1 large onion, chopped 1 large raw potato, chopped 1 cup cabbage, coarsely chopped salt and pepper to taste Instructions: 1) Rinse the beans, put 'em in a bowl with enough water to cover 'em, and let stand for eight to ten hours. 2) Drain beans. 3) Combine beans, ham hock, chicken broth, tomatoes, carrots, onion, potato, cabbage, and pepper in a large kettle. 4) Bring to a boil, stirrin' constantly, then reduce heat. 5) Simmer for two hours or 'til the beans are tender, stirrin' occasionally. 6) Remove bone and add salt as desired prior to servin'.
