louise's chicken mushroom soup

" __Julia Child "Cooking is a creation." __Piero Selvaggio "'Tis an ill cook that cannot lick his own fingers." __William Shakespeare ______________________________________Louise's Chicken Mushroom Soup Ingredients: 2 and 1/2 quarts water 3 pounds chicken parts 1 and 1/2 cups celery, sliced 1 and 1/2 cups carrots, sliced 1/2 cup onion, chopped 2 teaspoons salt 1 teaspoon thyme 1 bay leaf 1/2 teaspoon pepper 5 and 1/2 cups fresh mushrooms, sliced 3/4 cup uncooked barley Instructions: 1) Combine the chicken, celery, carrot, onion, salt, thyme, bay leaf, and pepper in a kettle. 2) Bring to a full boil, then reduce heat. 3) Simmer, covered, for about an hour or 'til the chicken is tender. 4) Strain the chicken and vegetables, and set the broth aside. 5) Remove the chicken from the bones and cut into cubes. 6) Put the chicken, vegetables, and broth back in the kettle. 7) Add the barley and the sliced mushrooms. 8) Bring to a full boil, then reduce heat. 9) Simmer, covered, 'til the barley is tender.
