Sunny Spinach SaladI

Ingredients:
4 cups spinach leaves, torn and tightly packed
3/4 cup smoked bacon, cooked and diced
3 or 4 thick strips, prior to cookin'
1/3 cup onion, chopped
1/3 cup cider vinegar
2 tablespoons water
1/2 cup raisins
2 teaspoons white sugar
1/2 cup Parmesan cheese, shredded
freshly ground black pepper

Instructions:
1) Put the spinach in a large bowl.
2) Fry bacon 'til crisp.
3) Drain and dice bacon, the set it aside.
4) Cook the onions in the bacon drippin's for about three minutes.
5) Reduce heat and stir in the vinegar and water.
6) Add the raisins and sugar and simmer for another three minutes.
7) Pour the hot dressin' over the spinach.
8) Add the Parmesan cheese and diced bacon.
9) Toss well, then top with freshly ground black pepper.
