It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Almost Italian Potato Bake Ingredients: 1 pound bulk Italian sausage 2 cups fresh mushrooms, sliced 4 medium-sized potatoes, peeled and sliced thin 1 [10 ounce size] package frozen chopped spinach, thawed and drained 1 and 1/2 cups cottage cheese 1/2 cup grated parmesan cheese 1 egg, beaten 1 medium-sized onion, chopped 3 cloves garlic, minced butter 2 tablespoons all-purpose flour salt and pepper to taste 1/8 teaspoon nutmeg 1 and 1/2 cups whole milk 2 cups mozzarella cheese, shredded Instructions: 1) Preheat oven to 350�. Grease an 7x11" casserole dish. 2) Cook the sausage and mushrooms over medium heat in a large skillet 'til the sausage is browned. 3) Drain sausage and mushrooms, then set aside. 4) Put the sliced potatoes in a kettle with enough water to cover 'em. 5) Bring potatoes to a full boil. 6) Reduce heat, cover, and cook for five minutes 'til tender but still crisp. 7) Drain potatoes, then set aside. 8) Thoroughly combine the spinach [make sure it's well drained], cottage cheese, parmesan cheese and beaten egg in a mixin' bowl, then set aside. 9) Saut� the onion and garlic in butter 'til tender. 10) Blend in the flour, salt, papper and nutmeg. 11) Gradually stir in the milk. 12) Bring onion sauce to a boil; then cook, stirrin' constantly for two minutes. 13) Remove onion sauce from heat. 14) Layer half the potatoes in prepared casserole dish. 15) Top potatoes with half of the spinach mixture, half the sausage mixture, half the onion sauce, and half the mozzarella cheese. 16) Layer with remaining potatoes, spinach, sausage, and onion sauce. 17) Cover and bake for thirty to thirty-five minutes, or 'til the potatoes are tender. 18) Sprinkle with the remainin' half of the mozzarella cheese. 19) Bake, uncovered, for five more minutes 'til the cheese is melted. 20) Let stand fifteen minutes prior to servin'.
