Penny Salad

Ingredients:
6 cups carrots
carrots should be peeled and cut into 'pennies'
1 red onion, thinly sliced
1 green bell pepper, cut in strips
1 cup tomato sauce*
1/2 cup white sugar
1/2 cup wine vinegar
1/2 cup olive oil
1/2 teaspoon pepper
1 teaspoon salt
1 teaspoon dry mustard

Instructions:
1) Immerse the carrots in enough boilin' water to cover 'em
for about thirty seconds.
2) Immediately plunge the carrots into ice water.
3) Drain carrots thoroughly.
4) In a large bowl, combine carrots, onion, and green pepper.
5) In a separate bowl, thoroughly combine the tomato sauce, sugar, vinegar, olive oil, pepper, salt, and dry mustard.
6) Once the dressin' is well blended, pour it over the carrot mixture
and toss well.
7) Cover and chill completely before servin'.

*Note: I use homemade tomato sauce,
but store bought will work okay too if it's not overly spicey.
