It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Almond Apricot Brownies Ingredients: 2 [2 ounce size] bars white bakin' chocolate 1/3 cup butter 1/2 cup brown sugar, packed 2 eggs, beaten 1/4 teaspoon vanilla extract 3/4 cup all-purpose flour 1/2 teaspoon bakin' powder 1/4 teaspoon salt 1 cup dried apricots, finely chopped 1/4 cup almonds, sliced 1/4 cup flaked coconut Instructions: 1) Preheat oven to 350. Grease a 9" square bakin' pan. 2) Melt butter and chocolate in a saucepan over low heat, stirrin' constantly 'til all the chocoloate is melted. 3) Remove chocolate mixture from heat. 4) Stir in brown sugar, eggs, and vanilla extract, then blend well and set aside. 5) Combine flour, bakin' powder, and salt in a separate bowl. 6) Stir in chocloate mixture. 7) Thoroughly combine apricots, almonds, and coconut in a separate bowl. 8) Stir half the apricot mixture into the batter. 9) Turn batter into the prepared pan. 10) Sprinkle the remainin' half of the apricot mixture over the top of the batter. 11) Bake for twenty-five minutes, or 'til golden brown. 12) Cool before servin'.
