Spicy Butternut Casserole

Ingredients:
1 large butternut squash
1 cup onion, chopped
2 cloves garlic, crushed
2 or 3 tablespoons olive oil, extra virgin preferred
1 teaspoon ground cumin
1 teaspoon chili powder
cayenne pepper to taste
1 cup red bell pepper, coarsely chopped
1 cup green bell pepper, coarsely chopped
1 teaspoon salt
4 eggs, beaten
2 cups corn kernels [you can use frozen corn]
2 cups sharp cheddar cheese, grated

Instructions:
1) Preheat oven to 425�.
2) Cut squash in half the long way and scoop out the seeds.
3) Bake with the cut sides down for about fifty minutes,
'til squash is very soft.
4) Remove squash from the oven and cool.
5) Reduce oven temperature to 350�.
6) Scoop squash out of the shell and mash 'til smooth.
7) Saut� onion, garlic, cumin, chili powder, and cayenne in olive oil
'til the onion is translucent.
8) Stir in the peppers and the salt, stir.
9) Cover and simmer over low heat for five minutes.
10) Stir beaten eggs into the squash.
11) Add corn, saut�ed vegetables, and grated cheese.
Combine thoroughly.
12) Cover and bake in a casserole dish for twenty minutes.
12) Uncover and bake for an additional twenty to thirty minutes.
