Fried Beans 'N Coconut

Ingredients:
4 tablespoons butter
1 tablespoon black mustard seeds
1/2 cup onion, finely chopped
1 tablespoon fresh ginger root, finely chopped
1 tablespoon salt
1/2 teaspoon black pepper
1 pound fresh green beans
---trimmed and cut crosswise into very thin rounds
1/4 teaspoon cayenne
1/4 cup coconut, unsweetened
2 tablespoons fresh coriander, chopped
2 tablespoons lemon juice

Instructions:
1) Heat butter in a large, heavy skillet over moderate heat.
2) Add mustard seeds and fry for thirty seconds.
3) Stir in onions, ginger, salt, and pepper.
4) Add the green beans.
5) Add the cayenne and fry, stirrin' constantly for five minutes.
6) Add the coconut and coriander.
7) Reduce heat and cover pan.
8) Cook for ten minutes or 'til the beans are tender, stirrin' occasionally.
9) Sprinkle with lemon juice, adjust seasonin's, and serve.
