It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Granny Smith Apple Cake Ingredients: 1 and 1/2 cups firmly packed brown sugar, divided 1 cup all-purpose flour 2 teaspoons bakin' powder 1/4 teaspoon salt 1 teaspoon ground cinnamon 1/2 cup whole milk 2 tablespoons vegetable oil 1 teaspoon vanilla extract 1 large Granny Smith apple, peeled and chopped 1 cup hot apple cider Instructions: 1) Preheat oven to 350�. Lightly grease a 9" round cake pan. 2) Combine 3/4 cup brown sugar, flour, bakin' powder, salt, and cinnamon in prepared cake pan. 3) Combine milk, vegetable oil, and vanilla extract. 4) Add milk mixture to flour mixture and stir 'til blended. 5) Stir in the chopped apple. 6) Sprinkle with remainin' brown sugar. 7) Slowly pour the hot cider over the batter, but don't stir! 8) Bake for thirty to thirty-five minutes, or 'til a cake layer forms on the top. 9) Cool slight and serve with vanilla ice cream.
