It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Cherry Almond Cake Ingredients: 1/2 cup butter, softened 1 cup white sugar 2 eggs 1 teaspoon almond extract 2 cups all-purpose flour 1 teaspoon bakin' powder 1 teaspoon bakin' soda 1/2 teaspoon salt 1 cup dairy sour cream 1 [21 ounce size] can cherry pie filling 3/4 cup almonds, sliced Instructions: 1) Preheat oven to 350�. Grease a 9x13" bakin' pan. 2) Put butter and sugar in a large mixin' bowl. 3) Beat with an electric mixer on medium speed for about four minutes. 4) Add the eggs and mix well. 5) Stir in the almond extract. 6) Combine flour, bakin' powder, bakin' soda and salt in a medium bowl and mix well. 7) Add flour mixture to butter mixture, alternately with the sour cream. 8) Mix 'til ingredients are just combined. 9) Spoon the batter evenly into the prepared pan. 10) Spoon the cherry pie fillin' evenly over batter. 11) Sprinkle with almonds. 12) Bake for thirty-five to forty minutes, or 'til the cake tests done. 13) Let cool in pan a while before cuttin' into squares.
