spaghetti squash primavera

It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Spaghetti Squash Primavera Ingredients: 1 cup tomatoes, finely chopped 1 cup cucumbers, diced 1/2 cup fresh parsley, chopped 1/2 cup finely fresh basil, chopped 1/2 cup red onions, diced 1 tablepsoon salad oil juice of 1 lemon 2 cloves garlic, crushed 1 spaghetti squash [approximately 3 pounds] 4 quarts boilin' water dash of salt dash of fresh ground pepper Instructions: 1) Put the tomatoes, cucumbers, parsley, basil and onions in a large bowl. 2) Combine the oil, lemon juice and garlic and pour over the vegetables. 3) Mix well and set aside. 4) Put the spaghetti squash in a pot with four quarts of boilin' water and cook for fifteen minutes. 5) Prick the squash in four places with the tines of a fork and continue cookin' for another thirty minutes. 6) Remove squash from pot. 7) Let cool for 5 minutes, then cut in half lengthwise, then scoop out the seeds. 8) Usin' a fork, pull out the strands of squash. 9) Mix the squash with the well-marinated vegetables. 10) Season with salt and pepper.
