Becca's Beans 'N Mushrooms

Ingredients:
1 pound dried black eyed beans --- picked, washed, and drained
2 pints water
1/2 pound mushrooms, thinly sliced
6 tablespoons vegetable oil
1 teaspoon whole cumin seeds
1 stick cinnamon
1 large onion, chopped
3 cloves garlic, peeled and chopped fine
1 [14 ounce size] can tomatoes, peeled and chopped
2 teaspoon ground coriander seeds
1 teaspoon ground cumin
1/2 teaspoon ground turmeric
1/2 teaspoon cayenne pepper
1 tablespoon salt
black pepper to taste
3 tablepsoons fresh parsley, chopped

Instructions:
1) Put the beans and water into a heavy pot and bring to boil a full boil.
2) Cover, reduce heat, and simmer for about two minutes.
3) Turn off the heat and let the pot sit, undisturbed, for one hour.
4) Heat the oil and saut� the cumin seeds and cinnamon stick
for a few seconds.
5) Add onion and garlic, and saut� 'til the edges begin to brown.
6) Add mushrooms and fry 'til the mushrooms begin to soften.
7) Add tomatoes, ground coriander, ground cumin, tumeric,
and cayenne pepper.
8) Cook and stir for one or two minutes.
9) Cover, reduce heat, and cook for another ten minutes.
10) Turn off the heat.
11) Bring the beans to a boil again.
12) Cover and simmer for twenty minutes, or 'til tender.
13) Add the mushroom mixture to the beans and water.
14) Add salt, pepper, and fresh parsley.
15) Stir and cook 'til mixture is simmerin'.
16) Continue to simmer, uncovered, over medium heat
for another thirty minutes or so.
17) Stir occasionally.
18) Remove cinnamon stick prior to servin'.
