Chocolate Cake Ingredients: 1/2 cup butter 1 and 1/2 cups white sugar 3 eggs 1 teapoon vanilla extract 1/2 cup unsweetened cocoa powder 2 cups all-purpose flour 1 teaspoon bakin' soda 1 teaspoon bakin' powder 1/4 teaspoon salt 1 cup water 8 ounces sauerkraut --- rinsed, drained, and chopped fine Instructions: 1) Preheat oven to 350�. Grease and flour a 9x13' cake pan. 2) Cream together butter and sugar in a large mixin' bowl 'til light and fluffy. 3) Beat in the eggs one at a time. 4) Beat in the vanilla extract. 5) Sift together dry ingredients and add to egg mixture in small amounts, beatin' well after each addition and alternatin' with small amounts of water, 'til all have been thoroughly blended in. 6) Stir in the sauerkraut. 7) Pour batter into prepared pan. 8) Bake for thirty-five to forty minutes or 'til cake tests done. 9) Cool completely before icin'. *Note: folks generally mistake the sauerkraut for coconut. Chocolate Icin' Ingredients: 1 cup semi-sweet chocolate chips 4 tablespoons butter 1/2 cup sour cream 1 teaspoon vanilla extract 2 and 3/4 cups confectioners' sugar, sifted 1/4 teaspoon salt Instructions: 1) Melt chocolate chips and butter. 2) Blend in the sour cream, vanilla extract, and salt. 3) Gradually add the confectioners' sugar 'til the icin' is of proper spreadin' consistency. 4) Beat, then spread over the cooled cake.
