It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Speed Demon Spinach Lasagna Ingredients: 1/4 cup butter 1/4 cup all-purpose flour 1 and 1/2 teaspoons salt 2 and 1/2 cups whole milk 2 [10 ounce size] packages frozen chopped spinach --- cooked and drained 1/4 teaspoon mace 1/4 teaspoon nutmeg 9 lasagna noodles, cooked 1 cup creamed cottage cheese 2 hard-boiled eggs, sliced grated Parmesan cheese Instructions: 1) Preheat oven to 375�. Grease an 8x12" bakin' dish. 2) Melt butter in a saucpan. 3) Stir in flour and salt 'til well blended. 3) Gradually stir in milk. 4) Cook, stirrin' constantly 'til sauce begins to bubble. 5) Continue to cook, stirrin' constantly, over low heat, for five minutes. 6) Combine two cups of the sauce with the spinach, mace, and nutmeg, then set aside. 7) Pour half of the remainin' sauce into the prepared bakin' dish and cover with three cooked lasagna noodles. 8) Spread half of the spinach mixture over the noodles, then dot with half of the cottage cheese and the slices of one egg. 9) Repeat the layerin' of noodles, spinach, cottage cheese, and egg. 10) Top with the last three noodles and pour the remainin' sauce over the top. 11) Sprinkle with Parmesan cheese and bake for about thirty-five minutes, 'til hot and bubblin'. 12) Let stand for about ten minutes prior to servin'.
