louise's zucchini parmesan

It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Louise's Zucchini Parmesan Ingredients: 4 to 5 medium zucchini squashes, about 1 1/2 pounds 1/4 cup all-purpose flour 1 and 1/2 teaspoons salt 1 teaspoon dried leaf oregano 1/2 teaspoon dried leaf basil 1/4 teaspoon ground black pepper 1/4 cup olive oil 2 tomatoes, sliced 1 cup sour cream 1/2 cup grated Parmesan cheese Instructions: 1. Preheat oven to 350�. Grease an 8" square bakin' dish. 2.Scrub the zucchini and cut into 1/4" slices. 2. In a medium bowl, combine the flour, 1/2 teaspoon salt, 1/2 teaspoon oregano, 1/4 teaspoon basil, and 1/8 teaspoon pepper. 3. Toss zucchini slices with the seasoned flour 'til they're thoroughly coated. 4. Heat the olive oil over medium low heat in a large skillet. 5. Saut� the zucchini in batches 'til golden brown, about 4 minutes on each side, then drain well. 6. In a bowl, combine sour cream, remainin' 1 teaspoon salt, remainin' 1/2 teaspoon oregano, 1/4 teaspoon basil, and 1/8 teaspoon pepper. 7. Arrange the zucchini slices in the bakin' dish. 8. Put the tomato slices on top of the zucchin. 9. Spread the sour cream mixture over tomatoes, then sprinkle with Parmesan cheese. 10. Bake for about thirty minutes, or 'til the zucchini is tender.
