It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Basic Rhubarb Preserves Ingredients: 4 cups fresh rhubarb, cut into small pieces 3 cups white sugar 1/2 cup water Instructions: 1) Boil the sugar and the water for about five minutes 2) Add the rhubarb and simmer for about four minutes. 3) Pour into sterilized jars, fill to top, then seal. 4) Cover and clamp jars . Don't wipe the syrup from the tops or rings before sealin' 'cause if you do, you could be spreadin' bacteria. 5) Put the sealed jars back in the wash boiler, cover with hot water to a level of six to eight inches above the tops of the jars. 6) Bring to the boilin' point, then let boil for twenty minutes [for pint-size jars] or thirty minutes [for quart-size jars].
