It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Pretty Good Peach Bread Ingredients: 1/2 cup butter 1 cup white sugar 3 eggs 2 and 3/4 cup all-purpose flour 1 and 1/2 teaspoons bakin' powder 1/2 teaspoon bakin' soda 1/2 teaspoon salt 1 teaspoon ground cinnamon 3/4 teaspoon ground cloves 2 cups fresh peaches, sliced 2 tablespoons orange juice concentrate, undiluted 1 tablespoon orange zest 1 and 1/2 teaspoons vanilla extract 3/4 cup pistachio nuts, chopped Instructions: 1) Preheat oven to 350�. 2) Grease and flour a 9"x5"x3" loaf pan. 3) Thoroughly cream together butter and sugar. 4) Add eggs, one at a time, beatin' well after each addition. 5) In a separate bowl, combine flour, bakin' powder, bakin' soda, salt, cinnamon and cloves. 6) Alternately stir the butter mixture and the peaches into the flour mixture. 7) Stir in the orange juice concentrate, orange zest, vanilla extract, and pistachio nuts. 8) Pour batter into prepared pan. 9) Bake for approximately fifty to sixty minutes, or 'til a tooth pick comes out clean. 10) Cool in pan on a wire rack for about ten minutes, then remove from pan and allow to cool completely before servin'.
