It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Peppy Apple Salad Ingredients: 1 [8 ounce size] container plain nonfat yogurt 2 cups rotini pasta, uncooked 1 can [8 ounce size] unsweetened crushed pineapple, undrained 1/2 cup shredded carrot 1 cup sliced celery 1/2 teaspoon salt 1/4 cup green onions, sliced 1/4 teaspoon garlic powder 1/4 cup raisins 1/4 teaspoon dry mustard 3 cups diced York or Winesap apples, unpeeled 1 teaspoon crystallized ginger, finely chopped 1 tablespoon honey Instructions: 1) Thoroughly combine yogurt, pineapple, salt, garlic powder, dry mustard, ginger, and honey --- then refrigerate. 2) Cook the pasta accordin' to package directions --- but leave out the salt. 3) Rinse the pasta with cold water, drain thoroughly, and allow to cool completely. 4) In large bowl, combine all ingredients includin' yogurt dressing. Chill thoroughly before servin'. Yield: 8 cups
