It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Cousin Eula's Strawberry Bread Ingredients: 1 quart fresh strawberries, hulled 2 cups white sugar 3 cups all-purpose flour 1 teaspoon bakin' powder 1 teaspoon salt 1 teaspoon ground cinnamon 1/4 cup fresh mint, finely chopped 1 and 1/2 cups almonds, sliced 4 large eggs, room temperature 1 and 1/4 cups vegetable oil Instructions: 1) Preheat oven to 350�. 2) Grease and flour two 9"x5" loaf pans. 3) In a mixin' bowl, mash together the strawberries and one cup of the sugar. 4) In another mixin' bowl, combine the flour, bakin' powder, salt, cinnamon, mint, and almonds. 5) In yet another mixin' bowl, beat the eggs together with the remainin' sugar, then add the vegetable oil and strawberries and mix thoroughly. 6) Stir in the dry ingredients. Batter will be thick. 7) Divide the batter between the loaf pans then bake 'til bread tests done, approximately one hour. Top should be lightly browned. 8) Cool in pans for about fifteen minutes, then finish cooling on a wire rack before slicing.
